Vanilla Honey-Glazed Carrots
An elegant Thanksgiving side with a hint of vanilla sweetness!
Ingredients:
- 1 lb carrots sliced diagonally
- 3 tbsp honey
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 1 tsp fresh thyme
- Salt and pepper to taste
Instructions:

Boil the Carrots:
In a large pot, bring salted water to a boil. Add the carrots and cook for about 6-8 minutes, until tender but not mushy. Drain and set aside. -
Make the Vanilla Honey Glaze:
In a large skillet, melt the butter over medium heat. Stir in the honey, vanilla extract, and lemon juice. Cook for 1-2 minutes, allowing the glaze to slightly thicken. -
Combine & Cook:
Add the carrots to the skillet, tossing them in the vanilla honey glaze. Cook for 3-4 minutes until the carrots are evenly coated and slightly caramelized. -
Season & Serve:
Season with salt and pepper to taste, and sprinkle with fresh thyme for an extra touch of flavor (optional).
